The Story
We didn't build a restaurant. We built a parlour: a room where the food, the glass, and the people meet.

Parlour began as a simple idea: a neighborhood social where exceptional wine and chef-driven plates feel within reach, never stuffy, always considered. A place to linger.

It is the next chapter of Chef Antonio's own Las Vegas restaurant group, built shoulder-to-shoulder with a team that has cooked, poured, and hosted at some of the country's finest rooms. The cellar and the kitchen are in constant conversation, and every plate is designed to make the glass beside it better.

Come for a glass after work, a board to share, or a long table on a Sunday. However you arrive, you leave as a regular.

Chef Antonio is a distinguished culinary professional with over 35 years of experience in luxury dining, hospitality consulting, and restaurant development, leading and collaborating with premier establishments across London, New York, Chicago, Denver, Phoenix, Las Vegas, and Los Angeles.

His accolades include “Best Upcoming Chef,” “Best Brunch,” and recognition as one of the “Top 100 Men in Las Vegas” for two consecutive years. He has owned some of the city's top brunch restaurants and, as a hospitality consultant alongside Scott Commings, Season 12 winner of Hell's Kitchen, has shaped concepts from the Downtown Grand to The Mayfair Hotel and Reflection Bay Golf Club.

Featured on the Food Network, MSNBC, History, and Discovery, Antonio pairs refined culinary artistry with operational excellence and a deep commitment to community. Parlour is the next chapter of his own Las Vegas restaurant group: a wine bar and eatery built around the table.

Sommelier Matthew-Lorèn Lindsey doesn't merely pour wine, he architects the experiences that define it. Across a 15-year career touching every facet of the industry, from import and distribution to fine-wine sales and program development, he has earned his reputation as one of Las Vegas’s most definitive voices in wine.

As the visionary behind Las Vegas Wine Tours, he pioneered an entirely new category of tourism, reshaping how a city known for everything else discovers wine. He has produced hundreds of wine events and festivals, and serves as the lead judge for the Proof Awards. In the nation's largest double-blind spirits and wine competition, he evaluates hundreds of selections on craft and character alone.

A published writer and educator, Matthew's influence transcends the glass to live in print, in classrooms, and on the floor. Now, he brings his signature authority and curation to Parlour Wine Bar, anchored by a simple and absolute philosophy: wine must be as unforgettable as the story behind it, yet never out of reach.
